Giving our African foods a healthy twist is one of those things I really love to do. These recipes use fresh, minimally processed ingredients, lots of vegetables, unrefined grains and healthy Proteins …and everything is made from scratch. So here is a selection of my healthy black-eyed beans recipes from the past year that will making eating African food an unbridled joy.
1. Black-Eyed Peas Pancake
One of my favourite healthy meals to start a busy day! Black-eyed peas blended with fresh habanero peppers, eggs and red bell peppers, then seasoned with crushed parsley, freshly ground habanero pepper and vegetable bouillon cube. Great with steamed or oven baked sweet potatoes or boiled ripe plantains. Get the recipe here!
2. Black-Eyed Peas Cake
A healthy savory cake requiring neither flour, sweetener or sugar, nor raising agents, still super moist and light, but wholesome, vegetarian, gluten-free and vegan! The black-eyed peas stay pleasingly soft and hold its cake shape beautifully. Have it for breakfast, lunch, supper or snack. It’s simply zeelicious! Get the recipe here!
3. Moi Moi aka. Koki
Give Cameroonian “Koki” and Nigerian “Moi Moi a healthy twist by mading it with red and yellow bell peppers, fresh spinach and and touch of red Palm fruit oil. I call this Zee’s crème de la crème. Still savory, spongy and light, but also whole grain, gluten-free and vegan! Get the recipe here!
