Cooking yellow maize is quite easy. Once you have brought water to a boil, add maize flour and let it cook for 10 minutes. Then add maize flour, stir untill flour is evenly distributed, add water depending on how soft you want your fufu to be. Let it cook for 10 mins. You will know your fufu corn is cooked when it is sticky to the touch. Because maize is a carbohydrate rich food, it must be eaten in its right portion. Like every other carbohydrate food, fill 1/4 of your plate with yellow maize fufu.
SmartCooks Tips: To control portion size, form small balls of fufu the size of a tangarine which is approximately one serving.
Children, especially children born and raised away from our African food culture can be very picky with our food. A great way to encourage them to eat is to add color to their food and make it fun.
SmartCook Tips: To naturally add color, to maize fufu, cook maize in hibiscus flower juice (aka. folere or Zobo) or beetroot juice.
Serve with a vegetable soup of your choice and enjoy.
Happy and healthy cooking xoxo
