Now this is the discovery of the century you guys. Keto aubergine amala aka. eggplant fufu. If you are struggling to lose weight, cutting calories is one thing you can do to achieve weight loss. But how do you cut calories in corn meal, pounded yam, plantain amala or garri? That was the big question for me.
Our native foods are delicious no doubt but to be quite honest, the calories in our soup stables like eba, or cocoyam fufu is just too high especially if you are not highly physically active. Imagine that one small ball of garri about the size of your palm is about 39o calories and contains 70g of carbohydrates. You know very well as much as I do that we hardly eat just a palm size. It’s usually 3 times that size. I am talking about 210g of carbs and 1170 calories in one meal. And that’s just Eba!. Chai!!!! The soup is not even included. You can begin to imagine how difficult it will be to lose weight eating like that.
Thank God for Psyllium and for vegetables like eggplant (similar to garden egg). Psyllium is the miracle ingredient that can change any vegetable in ‘swallow’. What’s this miracle food you ask? Let me explain: Psyllium is the husk of the seed from the Plantago plant which contains a spongy fiber that reduces appetite, improves digestion and cleanses the system! Triple win! In combination with water, psyllium husk forms a gel (that is naturally gluten-free imagine!) that can help to keep the bowels regular (easy breezy poo) and is far more gentle – and natural – than using a laxative. It has now become a very popular food supplement for weight control. Due to its high fiber content, psyllium bulks up any food. Be it cereals, muesli or added to vegetables to make swallow, psyllium keeps you satiated for a long period of time. Love!
How does psyllium work?
Psyllium husk is a colon cleanser. If you mix it with Greek yogurt or with your smoothie, it will bulk and form a mass in the colon, as this mass is transported through the intestinal tract, it ‘sweeps’ waste and ‘scrubs’ the intestines, and carries the waste along with it. If mixed with water and taken before a meal, the husks will have enough time to swell, hence giving you a feeling of satisfaction and as a by-product of this – natural weight loss.
Be careful, though! Do not overdo it. It is recommended to start with a maximum of 1 tablespoon in 300ml of water or fruit juice once or twice a day to avoid adverse symptoms like bloating or stomach cramps. Due to its capacity to bulk up, it is advisable to drink enough water in order to avoid obstruction of psyllium in your throat.

How to cook Keto aubergine amala

Keto aubergine amala can be eaten with any green leafy veggie soup of your choice. It pairs really well with Eru (similar) to afang soup.

Let’s get cooking.
- 1 Aubergine, small
- 1 tbsp. psyllium husk
- Cut eggplant (aubergine) into small chunks.
- Steam untill really soft. If you do not own a steamer, cook with very little water untill soft.
- Use a fork to mash or blend using a food processor. If you cooked your aubergine, make sure to remove excess water using a mesh cloth or a clean kitchen cloth.
- Add puréed aubergine to a pot, add psyllium and stir till it becomes thick and similar to plantain amala in consistency.
- Enjoy with soup of choice.
- You can use any othe veggie (cauliflower, cabbage, carrot, garden egg, zuchinni etc.) to make swallow following this same method.
