I have had Mimi Kirk’s book – Live Raw – for ages and have only recently been going through it because I discovered that eating raw is the new craze on the internet. Like Mimi, a raw foodie is someone who eats 75-100% live, nutritionally dense organic uncooked and unprocessed food and drinks pure, live water.
Science now proves that cooking not only destroys nutrition and enzymes but chemically changes foods from the substances needed for health into acid-forming toxins, free-radicals and poisons that destroy our health.
Mimi Kirk writes in her book that the secret to her aging so gracefully is because of the raw lifestyle she has been living for more than two decades now and it’s true, she really look very young and healthy for 77!
Today we are treating ourselves to some raw ‘afroodles’ (yes we created that word which stands for noodles made from foods common to our african heritage) salad and guacamole aka. Avocado puree. Try it out and let us know how it goes in the comment areas below.
Raw Afroodle Salad
11/2 ripe Avocado
1/2 red onion
1/2 normal onion
1/4 tsp white pepper
1/8 tsp black pepper
1 tsp. Extra virgin olive oil (optional)
1/2 Sweet Potato
1 small Beetroot
2 small Carrots
a pinch of sea salt
- Guacamole Preparation
- Mash avocado in a bowl using a fork till you get a smooth paste.
- Squeeze lemon and orange into the bowl and mix.
- Add the rest of the ingredients and mix.
- Add spiralized vegetables and serve.
- 1. If you do not have a spiralizer, slice veggies thinly with a knife.
