Sometimes all you want to do is get in and out of the kitchen with a healthy and delicious meal prepared in the twinkle of an eye. That’s all the time I needed to cook this simple fish peppersoup. If you are a working mom trying to balance work and life, the last thing you want to do is spend half of your day in the kitchen. Oh please, don’t give me that ‘cooking takes time’ line. I can feel it coming already! Lol.
Don’t get me wrong, cooking takes time and it should, especially if you want to serve your loved ones a hearty home-made meal made with love. But seriously, cooking should not take a lifetime. Believe it or not, I made this simple fish peppersoup in exactly 10 minutes. The reason is simple: I always have ground spices at home so that I don’t waste time peeling ginger, garlic, and other spices. I also always de-gut and clean my fish before freezing. This saves time and energy on the day I want to cook.
The fish I used for this simple pepper soup recipe is called croaker. Ever heard of or tasted it before? Not yet? If you are looking for a tasty, easy-to-cook fish with lots of health benefits, this fish is for you. Croaker fish is a very delicious and healthy fish. With 0g of carbohydrate, 3g of fat, 17g of protein, croaker fish is a great food for anyone on a low-carb diet and that’s not all. It is low in salt and high in water content. Win!
Apart from the fact that croaker fish is low in carbs and fats, it also contains some very important vitamins like vitamin A which is great for normal vision and promote good functioning of our internal organs, B-9 or folic acid, essential for proper body function, B-12 necessary to make blood cells and maintain a healthy nervous system, and B-3 which plays an important role in reducing the risk of diseases such as certain cancers and diabetes, Calcium, a vital mineral best known to strengthen bones, teeth, the heart and reduce your risk of developing Hypertension, vitamin E which reduces cholesterol and the risk of developing diabetes. Double win! In fact, croaker fish is one of the healthiest fish on the planet.

- 1 large croaker fish, fresh & de-gutted
- 1 African nutmeg (ehuru/pebe)
- 5 garlic cloves,peeled
- 1/2 onion
- 1/2 red bell pepper
- 1 thumb-length ginger
- 1 tbsp. white pepper
- 1/2 teaspoon coriander (optional)
- 1/4 tsp marjoram (optional)
- 4 basil (Effirin) leaves
- 2 habanero peppers
- Bouilon cubes and salt to taste
- 1 litres water (or more), to cook
- Blend all spices into a fine paste except onion and bell pepper. Slice these lengthwise.
- Cut fish into desired slices and season with previously ground spices and refrigerate overnight.
- In a pot, add water, add fish and onions and cook till fish is almost tender. Then add bell pepper and cook for 1 minute.
- Serve hot.
- Add more water if necessary.
- Use any fish of choice like catfish.
