It’s December guys, the month of merrymaking! Are you excited already? I know I am! It’s the month when many (included myself) eat and drink like there is no tomorrow. (insert happy face)! I’ve been thinking about what to serve this seasons and believe me, with delicious dishes like eru/afang soup, ndolé aka bitterleaf soup, meat pie and much more flooding my mind, I have had a hard time trying to choose meals that will not tempt me to over-indulge and therefore compromise my weight loss goals. Nope, I’m not even going there! LOL! That’s why I’m starting this series with yam casserole, a delicious but nutrient-dense breakfast or brunch recipe made using Sympli yam cubes, proteins, and vegetables. Oh-my-yum.

Who would have thought that frozen yams could cook this good and taste authentically African too? I am amazed. The Sympli Natural Nigeria products are cleaned, sliced and freshly frozen thus preserving all the nutrients. I used the cam cubes for this recipe. All I had to do was boiled my yams and use it for the yam casserole. Easy peasy and, I didn’t have to worry if my yam is good or bad. They make sure to deliver the best quality yams all year round. How to cook yam casserole
This recipe calls for a packet of Sympli yam cubes that I boiled with some salt and then set aside. Next, I stir-fried onions, ginger, and garlic in a skillet added the sausages and veggies and stir-fried some more. Once this is ready, I beat my eggs with white pepper, salt, and seasoning. Next, I buttered my casserole dish so that my it won’t stick, added the boiled yams first, then the sausage-vegetable mix and last but definitely not least, the beaten eggs. This baked for about 30 minutes at 200°. Delicious is an understatement. And oh, be sure to let it cool for about 5 to 10 minutes before trying to remove it from the dish.

An easy and delicious breakfast or brunch made from Sympli yam cubes, sausage, and mixed vegetables.
- 1 packet Sympli yam cubes thawed
- 2 cups mixed vegetables cubed
- 1 cup sausage sliced into bite sizes
- 8 eggs whole
- 5 sprigs celery chopped
- 2 onion bulbs chopped
- 3 garlic cloves minced
- 1/2 thumb-size ginger
- 2 tbsp. butter for frying
- 1 tsp. butter for greasing casserole pan, melted
- 1 tsp. white pepper crushed
- 1 tsp. crushed dried pepper optional
- handful mixed green leafy spices parsley, celery and basil
- salt & seasoning to taste
Preheat oven to 200°. Then boil yam with salt and a little bit of water till cooked. Then drain water and set aside to cool.
Heat butter in a pan, add onion and stir-fry till onions are translucent, then add green leafy spices, sausage, and veggies and cook for 2 minutes.
Now beat eggs in another bowl, add crushed peppers, white pepper, salt, and seasoning. Beat well.
Grease a casserole dish or even a cake pan with melted butter´. Pour in the boil yams, then the vegetable and sausage mix and lastly the beaten eggs.
Bake for about 30 mins at 180°, cool and serve for breakfast or brunch.
You can also use a skillet to make this recipe. Just make sure to cook at medium to low heat to avoid burns. And cover the skillet for thorough cooking.
