How’s the week going fam? Here is a quick, healthy and delicious breakfast option that you can enjoy this week. Spinach fortified scrambles eggs for the win. Adding spinach to your eggs is a great way of getting your greens in. It is not news to say that dark leafy greens pack a punch in terms of nutrition. Spinach, for example, is high in vitamin K, A, B2, and B6. It is also rich in folate, fiber and contains some protein which makes it a great food for weight loss.
Other dark leafy greens like efo tete aka green or even ugu are also a healthy alternative to spinach if that’s what you prefer. I used my Actifry to fry the plantains using just one teaspoon of oil. If you don’t own an Actifry and you want to cut down on oil when frying, you should definitely get back. It is so worth the money.
To make my spinach fortified scrambled eggs, I added a hand full of spinach, onions, tomatoes, and garlic to two whole eggs, seasoned with my fav MSG and yeast-free vegetable broth powder and fried in 1 teaspoon of oil as well.
If you are on a low-carb diet (i.e. Less than the required 200g for healthy active adults), be sure to portion control that plantain. Just about a quarter of a 20-inch plate is sufficient. That’s about 1/3 of a plantain making for 119 calories and 31,6g of carbs and 2g of fats.
Depending on your daily carb goal, include starchy carbs like plantain, yam or potatoes just once a day so that you stay within your daily goal for weight loss.
For those on a Keto diet, leave out the plantain completely as this diet calls for less than 20g of carbs per day. Bulk up your meal with more dark leafy greens and other non-starchy carbs.

- 2 whole eggs
- 1/2 onion
- 1 fresh tomatoe
- 2 garlic cloves
- 1/2 tsp. white pepper powder
- 1 tsp. olive oil
- 2 hands full of fresh spinach
- 1/4 glass of water
- Scotch bonnet (ata rodo) to taste
- Salt to taste
- Chop onions, tomatoes and garlic.
- Add water into the pan and heat, then add onions, tomatoes and garlic and cook for 2 minutes.
- Add salt, scotch bonnet and white pepper and seasoning to eggs, beat and add into the pan.
- Once eggs begins to harden, add spinach, add a inch of salt and cook till spinach wilts. Drizzle olive oil on top and turn off the heat and serve on its own or white baked plantains.
