Today, I’m taking you on a culinary safari to Morocco located in the Maghreb region of North Africa, a country of dizzying diversity. Today, I share with you one of Morocco’s most common meal; vegetable tajine. Tajine is a slow-simmered stew generally cooked with vegetables, meats and a blend of Moroccan spices to create a succulently savory stew that’s deliciously rich in flavor.
What is Tajine?
Vegetable Tajine gets its name from the earthenware pot in which it is cooked. The method of preparing tajine varies across different North African countries. Moroccan and Algerian tajine dishes are slow-cooked savory stews, typically made with sliced meat, poultry or fish together. Meanwhile, vegetables or fruit and common spices like ginger, turmeric, cinnamon, cumin, saffron, and paprika are also made use of during cooking.
How to cook vegetable tajine
To cook my version of vegetable tajine, I fried fry onion in some oil, then I add skinless chicken breast and my tajine spice blend and stir-fry until almost cooked. Next, I puréed or blended tomatoes and slow-simmered for about 30 minutes add water or chicken stock if necessary. Once tomatoes are no longer sour, I add mixed vegetables of choice. I used bell peppers, green beans, and carrots. I let this simmer for another 10 minutes and served vegetable tagine with Sympli yams. Moroccan chicken and vegetable tajine
Take your taste buds on a tasty Moroccan safari with this simple but wickedly delicious vegetable tagine made with lots of vegetables and Moroccan spices.
- 1 packet Sympli yam fries
- 1 large onion chopped
- 1 red, yellow and green peppers each cut into large chunks
- 2 carrots
- 1 handful green beans
- 300 g skinless chicken breast cut into bite sizes
- 400 g tomato purée or blended fresh tomatoes
- 50 ml oil
- Salt and seasoning
How to make tajine spice blend
- 1 tsp pepper flakes
- 2 tsp ground black pepper
- 2 tsp paprika (powdered red bell pepper aka tatashe)
- 2 tsp ground ginger
- 1.5 tsp ground turmeric
- 1.5 tsp ground cinnamon
Boil Sympli yam fries and set aside to cool.
Stir-fry onions until translucent, then add chicken and spice blend. Fry till almost cooked.
Add blended tomatoes and slow-simmer under medium heat for about 30 minutes. Add chicken stock or water if necessary. Season with salt and chicken seasoning cube.
Add vegetables and cook for 10 minutes and serve hot.
