This is one drink that makes me so proud of myself and thank God for the gift of cooking and reinventing foods for health and wellness.
I loooove watermelon. One of the reasons is that it provides a good source of water with natural sweetness. So you get to eat up to a full watermelon guilt-free. Great huh?!!! :). I started playing with this recipe since summer last year. I was looking for ways to make eating watermelon more interesting.
Whenever time was against me, I juiced my melon and carried it to meetings or to work and just by chance, I added some fresh mint which was turning brown and B.O.O.M, the taste was amazing. The rest is history.
But before, I share this delicious recipe with you, I want you to know how beneficial the ingredients are for your body. I use only healthy ingredients from nature because I love you all like that! 🙂
One of the ingredients is coconut Oil which can help you burn more fat. Studies show that medium-chain triglycerides (MCTs) in coconut oil can increase energy expenditure compared to the same amount of calories from longer chain fats. One study found that 15-30 grams of MCTs per day increased 24 hour energy expenditure by 5%, totalling about 120 calories per day.

- 1/4 watermelon
- 1 tsp. extra virgin coconut oil
- 1 tsp.vanilla extract
- 1 handfull fresh mint leaves
- 1/2 lime
- Peel and cut watermelon into small cubes that can fit into your food processor.
- Wash mint leaves and squeeze out the juice from half a lime.
- Now add all ingredients in a food processor and blend well.
- Serve and enjoy.
